Special Wine Dinner at YATS Restaurant
Designed for food lovers who are starting to get into wine also, YATS Restaurant has unveiled a 4-course wine-paired dinner menu.
This 4-course wine dinner menu that costs p950/person is a good way to enjoy a fine meal with some classic French wine. Here is the menu.
Wine No, 1: 2012 Château Vrai Caillou, Entre Deux Mers
A refreshing white wine from the famed Bordeaux wine region of France, medium intensity, crisp and lively, made from a classic blend of Sauvignon Blanc and Semillon wine grape varieties. This appetizing white wine will accompany the first two courses of the meal.
Course No. 1:
Chicken Ballotine with Pistachio
Served with French Beans and Heirloom Cherry Tomato
Course No. 2:
Mussels a La Bourguinonne with Persillade
Wine No, 2: 2015 Château Rougier, Bordeaux
2015 is one of the best vintage years in France and this classic Bordeaux red wine certainly lends credit to that claim. To a connoisseur, a fine wine is one that is neither showy nor shy. It is a wine that managed to balance myriad individual qualities such as weight, tartness, sweetness, astringency and alcohol strength. The wines of Bordeaux are particular famous for its consistent achievements in this aspect, so much so that the French has a special word for this deft touch in winemaking, called finesse.
Finesse is important when a wine is paired with food. Wine-food pairing is always about harmony. Any side that overpowers the other will result in a terrible experience on the palate where the two will have to meet.
This 2015 Château Rougier is made from, again, a classic blend comprised mainly of Merlot and Cabernet Sauvignon, two pillars upon which the greatest wines in Bordeaux are built. This rich but elegant red wine will accompany the last two courses of this wine dinner.
Course No. 3:
Braised Cod
Red Wine Butter Sauce
Served with Colcannon Potato & Spinach
(Red wine with fish, is that so unthinkable? Let’s try and see for ourselves!)
Course No. 4:
Navarin of Beef Bordelaise Style
with Bone marrow
Those who are feeling very European can stay on after dinner to enjoy some Port Wine accompanied by some blue cheese such as the famous English Blue Stilton. Many wine-and-cheese lovers consider this to the all-time greatest wine and cheese pairing.
Those who prefer something sweeter will probably enjoy a Sauternes or a sweet German wine, both of which are ubiquitous in family dinners around Europe and now slowly gaining traction in Asia also.
